300g flour
30g sugar
1 tsp. vanilla sugar
½ lemon (finely grated zest)
300g milk
200g buttermilk
2 eggs (divided into yolks and whites)
1 pinch salt
50g butter
Combine flour, sugar, vanilla sugar and lemon zest in a 2l Margrethe bowl.
Combine milk and egg yolks in a mixing jug, then whisk into the flour mixture a little at a time until the flour has completely dissolved without lumps.
Let the batter rest for 20 minutes.
Melt the butter and stir it into the batter.
Whisk the egg whites until stiff, adding salt while whisking.
Fold the stiff egg whites into the batter.
Cook the waffles in a hot waffle iron seasoned with a small amount of oil for the first waffle.
